  • 1.5 tsp ground cumin
  • 1.5 tsp ground coriander
  • Olive oil for greasing fish

Recipe preparation:

  1. Cut the zucchini lengthwise, then cut into thin slices. Transfer to a colander mounted above a bowl and mix with 1/2 tsp salt. Leave to drain for 15 minutes. Mix in a bowl of zucchini, tomatoes, red onions, jalapenos, lime juice and half cilantro. Leave to marinate for 1 hour.
  2. Light the grill to medium temperature. Mix cumin and coriander in a small bowl.
