Ingredients for the recipe:

  • 1 small head of red onion, cut into thin half rings
  • Finely grated zest and juice of 1 lemon

  • Coarse salt and freshly ground pepper
  • 1 small bunch of dill, chop finely (approximately 1 Art.)
  • 1/4 Art. walnuts
  • 1 small clove of garlic
  • 1/3 Art. olive oil
  • 1 (1.1 kg.) Prepared grilled chicken, remove the skin, separate the meat from the bones and cut into slices
  • 2 tomatoes, cut into slices
  • 1/2 bunch green leaf lettuce, tear leaves with your hands
  • 8 slices of wheat white bread, lightly brown
  • Chips for serving (optional)

Recipe preparation:

  1. Pickle onions: mix in a bowl red onion, lemon juice, sugar, 1/4 tbsp. water, 1/2 tsp salt and 1/4 tsp pepper. Leave the onions to marinate while others are preparing Ingredients.
  2. Make pesto sauce: grind in a food processor or blender dill, walnuts and garlic. Add olive oil and mix until smooth. Shift sauce pesto in a large bowl and mix in the lemon zest and 1/2 tsp. salt and pepper. Add chicken meat to the bowl and mix with sauce pesto.
  3. Prepare the vegetables: remove the onion from the marinade and lightly wring out. Sprinkle the tomatoes with olive oil and season with salt and pepper.
  4. Collect sandwiches: put on 4 slices of white bread lettuce, then tomatoes, chicken, pickled onions and cover with the remaining slices of bread. Serve sandwiches with chips.
