  • 2 tbsp. l red wine vinegar
  • 1 tbsp. l brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • A pinch of ground cloves
  • 1 tsp ground allspice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp fresh lime juice

Mango and Cilantro Relish:

  • 2 peeled and diced mangoes
  • 1/4 Art. finely chopped red onions
  • 2 tbsp. l chopped cilantro
  • 3 tbsp. l lime juice
  • 3 tbsp. l fresh orange juice
  • Salt and ground black pepper

Recipe preparation:

  1. For making Jerk chicken: In a food processor mash all ingredients except chicken until almost uniform condition. Pierce the chicken with a fork to make small holes. Put your shins and thighs in a large shallow dish and rub the marinade into the chicken. Cover and refrigerate 24-48 hours, depending on how rich you taste want to get.
  2. Preheat the grill. Grill chicken on each side 5-6 minutes until ready. Relish of mango and cilantro: In a bowl put mango, onion, cilantro, add lime juice and orange juice. Mix gently. Salt and pepper to taste.
