Recipe preparation:
- For making Jerk chicken: In a food processor mash all ingredients except chicken until almost uniform condition. Pierce the chicken with a fork to make small holes. Put your shins and thighs in a large shallow dish and rub the marinade into the chicken. Cover and refrigerate 24-48 hours, depending on how rich you taste want to get.
- Preheat the grill. Grill chicken on each side 5-6 minutes until ready. Relish of mango and cilantro: In a bowl put mango, onion, cilantro, add lime juice and orange juice. Mix gently. Salt and pepper to taste.
