Recipe preparation:
- Fry the sausage in a large medium-sized non-stick pan fire until brown, about 8 min. Take the sausage out frying pans and pat dry with paper towels. Heat oil in a large cauldron over moderately high fire; add flour gradually and fry, stirring constantly, until the flour becomes deep caramel color, from 7 to 10 minutes. Reduce heat to medium. Add onions, bell peppers, celery, garlic, thyme, Creole seasoning and cayenne pepper. Cook, constantly stirring for about 5 minutes. Gradually mix with the broth; add chicken, tomatoes, okru, Worcestershire sauce and sausage.
- Increase heat and bring the mixture to a boil. Reduce the fire to minimum and simmer, stirring occasionally until all vegetables are soft, and the broth thickens a little, about 20 minutes. Serve Gumbo with hot boiled rice, garnish with green onions. If desired add hot sauce.
