This juicy vitamin salad is made from a mixture of sugar and snow peas with fresh arugula and lemon French refueling. Sugar peas as opposed to snow more dense and has larger peas, so before adding to lettuce blanch it for a couple of minutes and immediately shift to water with ice, so that it becomes softly crispy and acquires practically same texture as snow pea. Both types can be eaten right in the pods, mix them with the rest of the ingredients and Serve with any meat or fish dishes, filling them spring freshness. - 2 tbsp. l Dijon mustard

- 2 pinches of sugar
- 450 gr chopped sugar peas
- 0.5 tsp red pepper flakes
- 450 gr snow peas trimmed
- 2 tbsp. arugula

Recipe preparation:
- Prepare a dressing. In a medium-sized bowl, mix mustard, lemon juice, vinegar and a pinch of salt. Slowly intervene olive and vegetable oil until smooth consistency. Salt to taste.
- Make a salad. Half fill a large bowl ice water. Install a colander in an ice bath. In the pan medium-sized, bring highly salted water to a boil, add a pinch of sugar. Add sugar peas and cook for 2 minutes. Use a strainer or slotted spoon to put it in a colander in the ice bath so that the peas stop cooking. Drain and decompose pods on a kitchen towel; pat them dry.
- Before serving, transfer the peas in a large bowl and salt, sprinkle with red pepper flakes and a pinch of sugar. Shuffle. Add raw snow peas and arugula and pour dressing; mix. Serve immediately.
