Ingredients for the recipe:

  • 550 gr green beans, previously peeled stalk
  • 110 gr. pancetta (dried pork belly), chopped cubes
  • Coarse salt and freshly ground pepper
  • 2 cloves garlic, thinly sliced
  • 1/4 Art. breadcrumbs
  • Lemon wedges for serving

Recipe preparation:

  1. Boil salted water in a large saucepan. Add green beans and cook for 4 minutes until half cooked. Drain the water and place the pan in which the beans were cooked in another large in size, filled with cold water.   2. Fry the pork belly in a large pan for 8 minutes until crisp, stirring occasionally. Transpose with Skimmers on a paper towel. In the remaining pan fat add garlic and fry 1 minute until golden brown. Add the breadcrumbs and cook another 1 minute, stirring, until the resulting mixture is roasted.
  3. Add green beans to the pan and cook for about 2 minutes to complete readiness. Add pancetta, salt and pepper. Serve with lemon wedges.
