Recipe preparation:

  1. In a large skillet with a non-stick coating on moderately fry over high heat, stirring the bacon until it is browned and fat will not melt, about 4 minutes. Add green beans and 1/4 each tsp salt and pepper and fry, stirring, until the beans become bright green. Add 2 tbsp. l water and keep cooking stirring occasionally until the beans become crisp-soft, about 6 minutes.
  2. Transfer the beans to a serving dish and stir in the chives. Rub the lemon zest directly over the beans, salt and pepper to taste.
