  1. Wash and peel the vegetables, cut into large pieces.
  2. Peel and chop the onion and garlic into small cubes. Send to frying pan and fry over low heat for about 3 minutes with the addition of oil.
  3. Mix in a bowl of wine vinegar, wine, orange zest, coriander, thyme and bay leaf. Pour into the pan to the onion. Mix, pour a glass of water and bring to a boil, cook about 15 minutes.
  4. Put the chopped vegetables in a hot marinade, simmer for about 3 minutes. Cover the pan with a lid and leave it for 3 hours, or better for the night.
  5. Serve cold.
