- Wash and peel the vegetables, cut into large pieces.
- Peel and chop the onion and garlic into small cubes. Send to frying pan and fry over low heat for about 3 minutes with the addition of oil.
- Mix in a bowl of wine vinegar, wine, orange zest, coriander, thyme and bay leaf. Pour into the pan to the onion. Mix, pour a glass of water and bring to a boil, cook about 15 minutes.
- Put the chopped vegetables in a hot marinade, simmer for about 3 minutes. Cover the pan with a lid and leave it for 3 hours, or better for the night.
- Serve cold.
