Gnocchi in meat sauce

Cook the Italian gnocchi dumplings on the 29th of any month, put a coin under a plate and make a wish! That’s exactly what they do people in some Latin American countries and believe that it helps them to increase their well-being. In the recipe presented gnocchi goes well with minced meat and olives sauce Nicoise growing in the south of France in the Nice region. At the absence of Nicoise olives, they can be replaced by ordinary black. Ingredients for the recipe:

  • 450 gr gnocchi
  • 250 gr ground beef
  • 1 tbsp. l olive oil
  • 120 gr. diced bacon
  • 4 garlic cloves crushed
  • 2 tbsp. l brandy or red wine
  • 3 shallots, chopped
  • 1 tbsp. diced carrots
  • 1 half-stalk celery
  • 1 tbsp. l tomato paste
  • 1 can (400 gr.) Tomatoes in its own juice
  • 1 tbsp. lightly salted chicken stock
  • 1 bay leaf
  • 2 strips of orange zest, 2.5 cm wide.
  • 2/3 Art. small pitted Nicoise olives chopped

Recipe preparation:

  1. In a medium-sized frying pan, heat the oil on a moderately strong the fire. Put the garlic and bacon. Fry for 4 minutes until the bacon will not get a golden hue. Add the minced meat and cook, stirring for 3 minutes. Pour brandy, sprinkle shallot, carrots, celery and lay out tomato paste. Stew for 4 minutes until the vegetables are soft. Salt and pepper to taste.
  2. Then crush the tomatoes with your hands, adding them to the minced meat, and pour there is juice from a can. Add broth, put bay leaf, zest and olives. Bring to a boil and reduce heat. Cover lid and simmer for 20 minutes. Then remove the cover, add fire, bring to a boil, so that part of the liquid evaporates and the sauce thickened.
