- 5 medium sweet potato sweet potato tubers, peeled and cut into 2.5 cm. slices (about 700 gr.)
- 2 tbsp. l olive oil
- Coarse salt and ground black pepper
- 1/2 tbsp. cranberry juice cocktail
- 3 tbsp. l dark brown sugar
- 2 tbsp. l (30 gr.) Butter
- 1/2 tsp ground cinnamon
- 1/4 Art. chopped toasted almonds

Recipe preparation:
- Preheat oven to 200 ° C. On a baking sheet, mix together sweet potatoes, olive oil and some salt and pepper. Fry until the potatoes turn golden brown and will be cooked in 30-40 minutes.
- Meanwhile, in a small saucepan over medium heat, boil half cranberry juice. Add brown sugar, creamy butter and cinnamon, cook by stirring until sugar dissolves, and the mixture will become homogeneous.
- When the potatoes are cooked, transfer them to a large bowl. Pour the icing on top and mix. Serve sweet potatoes in cranberry glaze with toasted almonds.
