Ingredients for the recipe:

  • 5 medium sweet potato sweet potato tubers, peeled and cut into 2.5 cm. slices (about 700 gr.)
  • 2 tbsp. l olive oil
  • Coarse salt and ground black pepper
  • 1/2 tbsp. cranberry juice cocktail
  • 3 tbsp. l dark brown sugar
  • 2 tbsp. l (30 gr.) Butter
  • 1/2 tsp ground cinnamon
  • 1/4 Art. chopped toasted almonds

Recipe preparation:

  1. Preheat oven to 200 ° C. On a baking sheet, mix together sweet potatoes, olive oil and some salt and pepper. Fry until the potatoes turn golden brown and will be cooked in 30-40 minutes.
  2. Meanwhile, in a small saucepan over medium heat, boil half cranberry juice. Add brown sugar, creamy butter and cinnamon, cook by stirring until sugar dissolves, and the mixture will become homogeneous.
  3. When the potatoes are cooked, transfer them to a large bowl. Pour the icing on top and mix. Serve sweet potatoes in cranberry glaze with toasted almonds.
