German potato salad with bacon

A hearty German potato salad filled with rich flavors fried bacon and tart gherkins. Potatoes boils with the peel (it contains many useful trace elements, especially if the potatoes are young) and mixed on a pan in fat, melted from bacon, with green onions, gherkins and crispy slices of fried bacon. Recipe:

Boil 0.7 kg. diced red potatoes in salted water until tender; drain the water. Fry 4 finely chopped slices of bacon until it becomes crispy; drain melted fat, leaving 2 tbsp. l in the pan. Add 1 bunch chopped green onions; fry it. Stir 1/4 tbsp. water 2 Art. l white wine vinegar and 2 tsp each. Dijon mustard and sugar and bring to a boil. Mix in 1/4 tbsp. chopped parsley and gherkins, potatoes and bacon; salt and pepper over to taste.
