Ingredients for the recipe:
- 2 eggs and 10 egg whites, slightly beaten
- Coarse salt
- 3 tbsp. l extra virgin olive oil
- 1 onion, chopped into thin strips
- 1 bunch of leafless beets without stems, leaves are cut thin straws
- Freshly ground pepper
- 30 gr dried sausage sappressat or other salami, thinly sliced
- 1 small baguette of whole grain flour (approximately 20 cm.), cut along
- 90 gr. grated cheese provolone (about 3/4 tbsp.)
- 2 tbsp. l chopped parsley
- 2 red-peeled potatoes, peeled, cut lengthwise into halves and sliced into thin slices

Recipe preparation:
- Preheat the oven to 200 degrees. Put the potatoes in pan, fill with cold water and salt. Let the water boil turn down the heat to medium and cook for 10 minutes to make the potatoes soft. Drain the water and set the pan aside.
- In a medium heat-resistant non-stick pan, heat on moderately high heat 1 tbsp. l olive oil. Add the onion and cook for 7 minutes until tender, stirring occasionally. Add another 1 tbsp. l olive oil, leaf beets and 1/4 tsp. salt. Cook stirring occasionally, 5 minutes, so that the leaves become soft and the liquid evaporated. Put in a large bowl and add potatoes, eggs, 1/4 tsp salt and black pepper to taste and flavor mix.
- Dry the pan. Heat in it the remaining 1 tbsp. l olive oil over medium heat. Pour in the egg mixture, on top lay out the suppressant. Cook 3 minutes until eggs begin curl up. Put the pan in the oven and bake for 12 minutes until ready. Golden should form on top crust.
