Fried zucchini and spinach wraps

Ingredients for the recipe:

  • 2 medium zucchini squash sliced lengthwise into pieces 0.5 cm thick.
  • 2 tsp olive oil
  • 1/8 tsp salt
  • A pinch of ground black pepper
  • 1 tbsp. fast hummus
  • 4 whole grain thin tortillas or pita bread (approximately 22 cm.)
  • 1/4 Art. roasted pine nuts
  • 1 medium red bell pepper, thinly sliced
  • 60 gr spinach
  • 0.5 tbsp. red onion, sliced in thin half rings
  • 1/4 Art. mint leaves

Recipe preparation:

  1. Preheat the grill or grill pan over medium heat. Grease both sides of zucchini slices with olive oil, salt and pepper. Fry until soft and golden brown for about 4 minutes on each side.
  2. Spread 1/4 tbsp. hummus for each pita. Sprinkle 1 tbsp. l pine nuts. Top with 3 slices of zucchini, 2 slices red pepper, 0.5 tbsp. spinach, a little onion and 1 tbsp. l peppermint. Roll each pita roll and cut in half diagonally.
