Recipe preparation:

  1. Put paper towels in several layers on a plate. Put tofu slices on top in one layer, paper on top again towels. Then cover with another plate and leave for 5 minutes, to absorb excess fluid.
  2. Sprinkle tofu with salt and pepper, roll in 1.5 tbsp. l corn starch. In a bowl, mix the lemon zest, 1/2 tbsp. water, 1/2 tsp salt and the remaining 1/2 tbsp. l corn starch. Set aside.
  3. In a large non-stick pan, heat 1 tbsp very strongly. l vegetable oil. Put the tofu and fry for 3-4 minutes with each side to a golden color. Put tofu on a plate.
  4. Add the remaining 1 tbsp. l olive oil in the pan. Lay out the white parts of the onion and ginger and cook for 30 seconds. Add mushrooms and carrots and cook 3 minutes until half cooked. Add peas and 1/4 tsp salt, cook, stirring, for another 4 minutes. Shake the mixture with lemon zest, add it to the pan and simmer for 2 minutes. Add the onion greens. Serve tofu with vegetables and rice.
