Fried steaks grated with coffee mix with Chile

The recipe for grilled flat iron steaks, cut from the scapular part of beef carcass. The meat is pickled in coffee mix consisting of freshly ground coffee, cumin, cinnamon and seasoning chili. Ingredients for the recipe:

  • 4 flat iron steaks (portioned beef flesh, carved from a shoulder blade weighing 220 g. each)
  • 1.5 tbsp. l cumin seeds
  • 1/4 Art. freshly ground coffee
  • Coarse salt and freshly ground pepper
  • 1.5 tbsp. l chili seasonings (a mixture of spices with chili peppers, see recipe)
  • 1.5 tsp ground cinnamon
  • Rapeseed oil

Recipe preparation:

  1. Prepare the coffee mixture for rubbing meat: in fry the cumin seeds in a small dry frying pan over low heat within 2 minutes until a characteristic aroma appears. To the pan shake as often as possible. Transfer seeds to a spice mill and grind thoroughly. Ground cumin mixed in a small bowl with ground coffee, 1 tbsp. l salt, 1.5 tbsp. l black pepper seasoning chili and cinnamon.
  2. Blot steaks to dry them. Oil them small amount of rapeseed oil. Put the coffee mixture on a baking sheet and roll steaks in it, each of which should take about 1 tbsp. l Cover them and put in the refrigerator no more, than 1 hour, otherwise the meat will dry out.
  3. Preheat the grill to a moderate heat. Every steak drizzle with a little rapeseed oil and fry 5-6 minutes on each side to medium fry. Shift steaks on a cutting board and leave for 15 minutes, then chop slices.
