Fried steak with salad of chard

Ingredients for the recipe:

  • 1 bunch of chard, cut the stems, thinly chop the leaves
  • 4 tbsp. l olive oil
  • 2 tbsp. large cubes of bread with a crust
  • 3-4 anchovies
  • 1 clove garlic, crushed
  • 1 tbsp. grape tomatoes cut in half
  • Juice 1 Lemon
  • 0.7 kg boneless sirloin beef steak
  • 1 tsp dried mint
  • 0.5 tbsp. crumbled feta

Recipe preparation:

  1. Put the chard in a bowl. Heat a large frying pan on moderately high heat.
  2. Add 1 tbsp. l sprinkle olive oil and bread cubes salt and black pepper. Stir fry until golden brown, 4-5 minutes. Add bread to the chard bowl.
  3. Add anchovies to the pan, kneading them with a whisk. Add garlic and 2 tbsp. l olive oil and fry until the garlic becomes golden, about 45 seconds. Add the tomatoes and lightly fry them, then stir in lemon juice, salt and pepper. Pour chard with warm dressing, mix and set aside so that greens wilted.
  4. Wipe out the pan and put on fire. Sprinkle steak on both sides crumpled, salt and pepper to taste. Add to pan the remaining 1 tbsp. l olive oil. Fry the steak until it browned below, about 5 minutes. Turn over and fry until brown on the other hand, 3-4 minutes for light roasting. Settle on a cutting board and let rest for 5 minutes.
  5. Add feta to salad and mix. Thin steak slices and serve with chard salad.
