- 4 salmon fillet (middle part) weighing 150 g., Thick about 2.5 cm
- 3 tbsp. l freshly squeezed lemon juice
- 3 tbsp. l olive oil
- 1 bunch of cabbage kale, cut the stems, thinly chop the leaves (about 6 tbsp.)
- 1/4 Art. dates
- 1 apple Hanikrisp
- 1/4 Art. finely grated pecorino cheese
- 3 tbsp. l fried almond needles
- 4 whole grain buns

Recipe preparation:
- Bring fish to room temperature 10 minutes before cooking.
- Meanwhile, in a large bowl, mix lemon juice, 2 tbsp. l olive oil and 1/4 tsp salt. Add cabbage kale, pepper and let it brew for 10 minutes.
- While the cabbage is infused, cut the dates and the apple thin straws. Add dates, apples, cheese and almonds to the cabbage. Pepper and mix well.
- Sprinkle fish with 0.5 tsp. salt and pepper. In a large pan with with a non-stick coating over moderate heat heat the remaining 1 tbsp. l olive oil. Increase the heat to medium. Put fish in a pan with skin up. Fry until golden brown with one side for about 4 minutes.
- Turn the fish over with a spatula and fry until it is firm to the touch, about 3 more minutes.
- Arrange salmon, salad and buns in four plates.
