Fried pork with eggplant and tomato

Cooking at home a beautiful and amazingly delicious fried dish pork tenderloin, eggplant, tomato and onion. To dish it turned out not fried, but fried, fry vegetables and meat separately. Very nutritious and healthy, a side dish can be made boiled fig.

  1. Cut the pork tenderloin into small pieces, onions cut into 4 parts and along the strips, eggplant – sliced, garlic – finely.

  2. Tomatoes (it is better to take dense) cut into 4 parts, remove seeds and cut into cubes.

  3. Sprinkle the eggplant slices with salt and leave for 10 minutes.

  4. Onions spread in oil, fry for 3-4 minutes, until brown, add garlic, fry for 30 seconds and remove on a plate. In the pan after the onion, add more oil, send prepared tenderloin slices, salt, pepper and fry until brown crust on all sides. After the meat, lay the eggplant and fry until golden brown. We put everything on the plates.

  5. We send tomato cubes to the pan, add the fried onions, water (¼ cups), salt and simmer over medium heat, stirring until evaporate liquid. Spread fried meat in tomatoes and onions, eggplant, mix and cook for another 4-5 minutes. Do not cover and stir constantly.

  6. Put the prepared pork with eggplant and tomatoes on plate, decorate with parsley leaves and serve with your favorite side dish and fresh bread.
