On high heat, heat a large cast-iron pan. Add 1 tbsp. l olive oil, 450 gr. peas and 1/4 tsp coarse salt. Toast, stirring occasionally, for 3 minutes to a crispy crust. Stir in 1 small pod of red jalapeno peppers, peeled and finely chopped, 1/3 tbsp. chopped mint and grated zest of 1 lime. Sprinkle with flakes of sea salt.
