  1. Mushrooms cut into quarters, large – into halves, pour cold water, salt, boil.
  2. Pour olive oil into a thick-bottomed pan, heat it, toss a sprig of sage and a plate of garlic. Stir fry five minutes, garlic, sage to remove.
  3. Dip the boiled mushrooms, fry until golden brown, salt, pepper, pour the broth, simmer a couple of minutes.
  4. When serving, heat the dish, put mushrooms on it with the resulting sauce, on them a whole intact yolk, pour truffle oil, sprinkle with coarse sea salt. On the table itself, mix the yolk with truffle oil and envelop mushrooms with this silk sauce, and enjoy!
