- 120 gr. salami sausages, cut into strips
- 1 medium onion chopped into thin half rings
- 2 small sweet peppers (green and yellow), chopped straws
- 1/2 tsp dried pepper flakes
- 1 tbsp. mashed tomatoes or marinara sauce (see recipe here)
- 1/4 Art. fresh parsley leaves
- 8 eggs
- 2 tbsp. l grated pecorino romano or parmesan cheese
- White bread for serving

Recipe preparation:
- Heat olive oil in a pan to medium temperature. Add garlic and fry until golden brown, about 3 min Remove the garlic from the oil and discard. Increase heat frying pans to moderate heat and add salami, onions, peppers and pepper flakes. Stir fry until salami will not fry for about 5 minutes Add mashed tomatoes and 1/2 tbsp. water, stew until vegetables become soft, about 5 minutes
- Reduce pan heating to medium temperature. To sprinkle vegetables with parsley leaves and make 4 indentations. Break into a bowl 2 eggs, then pour into one of the recesses. Repeat with remaining eggs. Sprinkle with grated cheese. Cover the pan with a lid and cook until the proteins harden and the yolks are prepared for desired readiness. Serve fried eggs with with bread.
