  1. Sift flour into a large bowl. Make a groove in the flour. Drive in 3 eggs. A little salt. Knead the dough. Cover the bowl with or cling film. Allow to stand for half an hour.

  3. Cut the chicken into small pieces and fry on hot butter. Grind in a blender or meat grinder.
  4. In the bowl with chicken add ricotta, half grated Parmesan, one egg and one yolk. Salt and pepper. Add nutmeg on the tip of a knife.
  5. Roll out the dough into thin layers. Special mold or cut mugs with a glass with a diameter of 5-6 cm with a glass. Put a teaspoon stuffed with chicken and ricotta in the center of each circle. Grease the edges protein and glue. Connect the resulting tips.
  6. Boil the resulting cappelletti in large quantities salted water. Take out slotted spoon. When serving, you can pour broth and sprinkle with the remaining parmesan.
