Festive egg-toe with spices

Tasty and warming egg-legs – what you need in the coldest time of year to create a festive mood. In many western countries Christmas and New Year are associated with a similar drink. AT This recipe, unlike the classic one, has no milk or cream. Ingredients for the recipe:

Spiced Apple Juice

  • 20 pcs. black pepper peas
  • 10 stars anise star
  • 10 pieces. allspice
  • 10 cinnamon sticks
  • 10 pieces. carnations
  • 10 fruits of cardamom
  • 2 l unfiltered apple juice without added sugar
  • 2 tbsp. fresh carrot juice
  • 1/2 tbsp. fresh ginger juice
  • 1/2 tbsp. unrefined cane sugar “Demerara”
  • Zest with 1 orange
  • 1/4 tsp freshly grated nutmeg
  • A pinch of salt

Egg leg mix

  • 3 large eggs
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cinnamon
  • 15 ml aged rum
  • A pinch of salt
  • 1/4 Art. and another 1/8 tbsp. granulated sugar

Festive egg-toe

  • 350 ml. aged rum
  • 180 ml. seasoned brandy
  • Freshly grated nutmeg, for decoration

Recipe preparation:

  1. For warmed apple juice with spices: combine black peppercorns, star anise, allspice, cinnamon, cloves and cardamom in a large saucepan over medium heat. Toast the spices until appearance of aroma (3-5 minutes). Pour in apple, carrot, ginger juices, add sugar, orange zest, nutmeg and salt. Reduce heat to minimum and leave mixture to stand. lid, until the juice has a flavor, and spices not well infused (1-2 hours). Strain the liquid through a shallow a sieve or gauze to remove sediment. Juice with spices can cook in advance and reheat before serving.
  2. Egg-leg mix: separate the yolks from the proteins. Put them separately in 2 medium bowls. Beat the yolks with nutmeg, cinnamon, rum and salt. Gradually add 1/4 tbsp. Sahara. Mix until the texture is silky and sugar not completely dissolved. Set aside for a while.
  3. Beat the proteins at medium speed, gradually adding 1/8 tbsp. Sahara. Get steady peaks.
  4. Gently mix the proteins into the yolk mass. Expiration date of this mixtures – about one evening. Make sure eggs are fresh because they will be served raw.
  5. Before serving festive egg-leg: for each serving mix the drink in a heat-resistant glass or in a mug: 120 ml hot apple juice with spices, 60 ml mix for egg-leg, 30 ml of rum and 15 ml of brandy. Garnish with grated nutmeg.
