Fajitas with steak, onion and sweet pepper

Enjoy the taste of classic fajitas served in restaurants. In this recipe, only the main ingredients of this Mexican dishes: beef, sweet peppers, onions and cheese. Nothing superfluous, but the taste is amazing thanks to typical for this cuisine spices. Ingredients for the recipe:

  • 0.7 kg skirt steak
  • 1 tbsp. l paprika
  • 2 tsp light brown sugar
  • 1 tsp ground zira
  • 1.5 tsp chili powder
  • 0.5 tsp Ancho Chili Powder
  • 0.5 tsp garlic powder
  • 3 lime juice + serving wedges
  • 3 tbsp. l unrefined olive oil + optional for grill
  • 4 sweet peppers (red, orange and / or yellow), thin chopped
  • 2 red onions, finely chopped
  • 8 to 12 wheat tortillas
  • Grated cheddar chopped fresh cilantro, for serving

Recipe preparation:

  1. Mix in a small bowl paprika, brown sugar, zira, chili powder, ancho powder, garlic powder and 1 tsp. salt.
  2. Put the steak in a large plastic bag with ziplock. Add 1 lime juice, 1 tbsp. l olive oil and spice mix; seal bag and rub the spices into the meat. Put in the refrigerator for 30 minutes and up to 2 hours.
  3. Meanwhile, on a moderate heat, heat large cast iron to the pan. Mix pepper and red onion in a large bowl with the remaining 2 tbsp. l olive oil, the juice of the remaining 2 limes and 1 tsp salt. Add to the pan and fry, stirring while the vegetables do not become soft and brown on the edges, 8-10 minutes.
  4. Preheat the grill to moderate heat and grease the grill olive oil. Fry steak for 3-5 minutes on each side for low heat. Lay on a cutting board and give the meat rest 5-10 minutes.
  5. Preheat the tortillas as recommended on the package. Slice the steak across the fibers and salt. Serve on cakes with onion and pepper, sprinkled with cheese and cilantro on top, garnished with slices lime.
