Fajitas with shrimp, mushrooms and corn

Serve grilled shrimp with a mixture of mushrooms and vegetables as Mexican fajitas – on warm wheat tortillas. Peeled shrimp before frying marinated in a mixture of lime juice with paprika, chili powder and other spices and then grilled just a couple of minutes to keep your juiciness and pleasant texture.   • 1.5 tsp ground zira
  • 2 lime juice + serving wedges
  • 2 tbsp. l extra virgin olive oil + optional for grill
  • 200 gr. shiitake mushrooms, chopped
  • 4 ears of corn, cut grains
  • 1 pepper blanched, peeled and chopped
  • 2 tbsp. l (30 gr.) Unsalted butter
  • 3 chopped green onions
  • 8 to 12 wheat tortillas
  • Crumbled Kotiha cheese for serving

Recipe preparation:

  1. In a small bowl, mix paprika, brown sugar, mixture spices with chili and 1 tsp. zirs and salts.
  2. Put the shrimp in a large ziplock plastic bag. Add 1 lime juice, 1 tbsp. l olive oil and spice mix; seal the bag and mix everything inside. Refrigerate at least 30 minutes or up to 2 hours.
  3. Meanwhile, in a large frying pan with non-stick coating on moderate heat, heat the remaining 1 tbsp. l olive oils. Add the mushrooms and sauté until they are browned. and do not become soft, about 5 minutes.
  4. Add the corn, blanched, butter and the remaining 0.5 hours. l zirs; salt it. Fry, stirring occasionally, until vegetables brown for about 3 minutes. Add the green onions and the remaining juice лайма. Remove from heat and cover to prevent vegetables have cooled down.
