Antipasto usually consists of several ingredients: vegetables, deli meats, slices of bread, cheeses, laid out in separate portions on a large dish. If you mix everything ingredients, you get a great salad with a rich a taste that has everything: delicious fried vegetables, salty smoked sausage, tart cheese, crispy crackers and fresh juicy salad greens. The taste of this salad is antipasti so bright that in as a dressing you only need a little olive oils. - 2 small eggplants cut in half and chopped into slices
- 12 small sweet peppers, cut in half
- 2 red onions, sliced in half rings
- 2 tbsp. cut cherry tomatoes in half

- 1 pack (150 gr.) Of small leaves of cabbage kale or 8 tbsp. chopped regular leaf cale
- 1 head of chopped inner Romano lettuce, chopped
- 2 tbsp. l balsamic vinegar
- 1 whole-grain crust bun, diced
- 60 gr thin slices of Sopressat sausage or salami (approximately 8 slices), sliced in strips
- 60 gr cheese pecorino romano, grated

Recipe preparation:
- Preheat oven with grill function. Place on a baking sheet. red onion, eggplant, bell pepper and cherry tomatoes, sprinkle 2 tbsp. l olive oil, salt and pepper. Fry in the oven by turning 1 time the other side, until vegetables will become soft and slightly charred, about 12 minutes.
- In a large salad bowl, mix cabbage and salad with the remaining 1 tbsp. l olive oil and with vinegar. Add fried vegetables and mix.
- Make the crackers: put the bread cubes on the same baking sheet, salt, pepper and fry until golden brown, turning the pan once, 1-2 minutes. Spread the lettuce over plates. Sprinkle with salami, cheese and crackers, sprinkle with olive oil and mix gently.
