- We wash the eggplants, cut into plates about 0.3 cm thick, sprinkle with salt and leave for 10 minutes so that the eggplant gives juice. Drain the juice, and cut the eggplant into small cubes.
- Heat the pan with vegetable oil and fry eggplant over high heat, stirring so that they do not burn.
- 2 minutes before the end of cooking pour in soy sauce, mix and turn off the fire. Leave the eggplant alone to they have cooled.
