- Porcini mushrooms thoroughly wipe off dirt with a damp cloth. Scrape the leg.
- Finely chop the mushrooms and pour 2 liters of water. Boil half an hour.
- Rinse eggplant, chop, drizzle with oil and bake in oven at 180 C for 30-40 minutes.
- Prepare root vegetables. Chopped carrots, parsley and celery julienne or grind on a grater of your choice. Passer them in vegetable oil.
- At the end of the frying, add green onion, chopped into the pan with a sharp knife.
- Peel and chop the potatoes.
- To mushrooms put potatoes and fried vegetables. Cook 20 minutes.
- Peel the tomatoes and remove the seeds. Cut them cubes.
- Put eggplant in the soup. Cook another 10 minutes.
- Put tomatoes in the soup, let it boil and turn off the heat. Garnish with sesame seed. Serve with sour cream and greens.
