  1. Cut eggplant into circles (16 pcs.), Spread on baking sheet, sprinkle with salt, sprinkle with oil.

  2. Put eggplant in the oven at 210 degrees for 15 minutes, until become rosy. Cooling down.

  3. In a bowl, mix mayonnaise with chopped garlic, grease prepared eggplant circles (8 pcs.) and spread on a flat a plate. Cut tomatoes with mozzarella into circles.

  4. We place eggplant slices of tomatoes and mozzarella cheese on the eggplant.

  5. Grease the remaining eggplants with aromatic mayonnaise, cover cheese, greased side down, add on top a sprig of parsley and immediately serve.
