Delicious eggplant appetizer with tomatoes. In the season of vegetables I prepare it at home and for the holidays, and just for every day. To make this appetizer, cut the eggplant in advance, add salt and give drain bitterness.

  1. Wash eggplant, cut into circles, salt and place in colander for an hour so that bitterness will go away.
  2. In a pan with a lot of vegetable oil put eggplant circles and fry them on both sides.
  3. Fried eggplant placed on layers of paper towels to they absorbed excess oil.
  4. Let’s do the sauce for now. Finely chop the greens in mayonnaise and squeeze the garlic. Mix.
  5. Cut the tomatoes into slices about the same thickness as already fried eggplant.
  6. Gathering a snack: put sauce on a circle of eggplant, then a circle of tomato, and on top a little more sauce. You can decorate drops of olive oil or herbs.
