- Dice the eggplant, I previously cleaned it from the peel. Grind cilantro and garlic.
- Fry the eggplant over medium heat for 5-6 minutes, then salt, pepper to taste, add cilantro and garlic and continue to fry another 2 minutes.
- Soak rice paper in cold water for 1 minute. Put eggplant on paper and wrap the roll, turning the ends inward.
- Fry our rolls over high heat for 1 minute each side.
