Ingredients for the recipe:

  • 225 gr. (approximately 1.5 tbsp.) frozen peeled edamame beans (green soybeans)
  • 1/4 Art. tahini sesame paste
  • 1/4 Art. water
  • 1/2 tsp grated lemon peel
  • Juice of 1 lemon (about 3 tbsp. L.)
  • 1 crushed clove of garlic
  • 3/4 tsp coarse salt
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 3 tbsp. l extra virgin olive oil
  • 1 tbsp. l chopped fresh parsley leaves
  • Serving options: slices of cucumber, celery, olives

Recipe preparation:

  1. Boil the beans in salted water for 4-5 minutes. or in microwave, cover, for 2-3 minutes.
  2. In a food processor, mashed edamame beans until smooth, sesame paste, juice and lemon zest, garlic, salt, cumin and coriander. Without turning off the appliance, slowly pour 2 tbsp. l olive oil and mix well.
  3. Transfer to a small bowl, add parsley and drizzle the remaining oil. Serve with the offered vegetables or place in the refrigerator, cover and store for up to 1 day. We offer a recipe for hummus from chickpeas cooked in a slow cooker.
