Edamame bean dip sauce and miso paste

Miso-paste is several species slightly different in taste: white (more soft and sweet), yellow (with a rich rich taste) and red (rich taste with nutty notes). Choose any of them to give the sauce a unique taste that is perfect complement dark sesame oil, fresh ginger, garlic, green onions and rice vinegar. Ingredients for the recipe:

  • 340 gr (about 2 tbsp.) frozen peeled beans edamame
  • 1/4 Art. white, yellow or red miso paste
  • 1 clove garlic, minced
  • 1 cm. Fresh ginger root, peeled and finely grated
  • 2 tsp dark sesame oil
  • 2-3 tbsp. l rice vinegar
  • 2 green onions, finely chopped
  • 0.5 tsp black sesame seeds (optional)
  • To serve: rice crackers with sesame seeds, chopped cucumbers, carrots and / or radishes

Recipe preparation:

  1. In a large saucepan, bring the water to a boil and add the beans. Cook until they are soft, about 5 minutes. Drain and cool slightly edamame.
  2. Put edamame in a food processor with miso paste, 0.5 Art. water, garlic, ginger, sesame oil and 2 tbsp. l rice vinegar. Set aside 1 tbsp. l green onions to serve and add the rest is in a food processor. Grind until smooth mass, scraping the mixture from the walls of the bowl as necessary.   3. Put the dip sauce in a small bowl and sprinkle with the set aside green onions and sesame seeds if you use them. Serve with crackers and vegetables for dipping.
