Double baked potato

  • 1.5 tbsp. l milk
  • 1.5 tbsp. l (75 gr.) Butter
  • 1 tbsp. sour cream
  • 150 gr. hot cheddar, grated (about 1 and 1/4 tbsp.)
  • 0.5 tbsp. l garlic salt
  • 3 slices of bacon, fried and crumbled
  • 1/4 Art. chopped green onions

Recipe preparation:

  1. Preheat the oven to 200 ° C. Wash the potatoes and pierce with a fork. Rub with olive oil and put on a large mold for roll or on a baking sheet with sides. Bake potatoes for 45 minutes or until ready. Remove from the oven and cut the tubers along in half. Reduce oven temperature to 170 ° C.
  2. When the potatoes cool down a bit so that they can be held, Scrape the pulp into the large bowl of the mixer. Add milk butter, sour cream, cheese, garlic, salt and pepper to taste. Mix everything until creamy. Spoon the mixture evenly back into potato shells.
  3. Place in the oven for 15 minutes to melt the cheese. Take out from the oven and sprinkle with bacon and green onions.

    Cook’s Note

    In my bitter experience, I realized that potatoes are not worth wrap in foil before baking. So the tuber shell will be soft and fall apart. And if you bake potatoes open, it the shell will be strong and can be easily scraped out of it the flesh.
