Surf & Terf (Roast with Meat and Seafood)

  • 6 giant jumbo prawns, take off the shell and remove vein

  • 8 asparagus stalks
  • 2 tbsp. l olive oil

  • 2 tsp chopped fresh thyme, plus 2 – 3 sprigs
  • 6 slices of pancetta (60 gr.)
  • Sea salt and freshly ground pepper
  • 1 tbsp. l (15 gr.) Unsalted butter

Herbal Oil

  • 1/4 Art. chopped fresh parsley
  • 2 tbsp. l chopped chives
  • 2 tbsp. l olive oil
  • Salt and freshly ground pepper

Recipe preparation:

  1. Make Herb Butter: Mix in a Food Processor pauses parsley, chives and olive oil. Enter water if necessary, and mix in 1/4 tsp. salt and pepper. Shift to a small bowl, cover and set aside (you can do oil in advance, and let stand for 2 hours).
