Dates stuffed with ricotta wrapped in bacon

I modified this delicious tapas a bit and added the taste of cottage cheese cheese. Ingredients for the recipe:

  • 450 gr (12 to 13 slices) bacon
  • 25 dates (about 350 gr.)
  • 1/3 Art. ricotta cheese
  • Special equipment: toothpicks, bamboo skewer for removing seeds from dates

Recipe preparation:

  1. Preheat the oven to 230 degrees. Cut the bacon in half, to make twice as many pieces. Set aside. To delete pits from dates, cut the ends from each date and insert the flat end of the skewer until it pushes out the bone. Repeat with the remaining dates.
  2. Place the ricotta in the lower corner of the plastic bag and tightly close. Use scissors to cut a small hole in one of the corners. Now use the bag to fill the dates cheese.
  3. Wrap dates with ricotta in a slice of bacon and secure a toothpick on a date cut. Put all the prepared dates on a baking sheet with parchment, leaving a small distance between them for a good toast. Bake for 15-20 min or until the bacon is fried and crispy. Take off dates from the baking sheet and carefully remove the toothpicks. Immediately serve to the table.
