  1. The eggs for this dish must be very fresh so that the protein is elastic and kept in shape. Break the egg into a bowl, the yolk should stay whole.
  2. Boil water in a narrow pan with wide sides. Turn down the fire. Water should bubble a little, not boil. Pour in the vinegar.
  3. Stir the water with a spoon until a funnel forms.
  4. Gently lower the egg into the funnel. Cook for 2-3 minutes, depends on the size of the egg.
  5. Remove the egg with a slotted spoon and place in cold water for 3 minutes, remove excess threads from the protein, if any.
  6. Dry, dip the egg in protein, sprinkle with breadcrumbs. Leave for a couple of minutes so that the crackers stick better.

  7. Deep-fry for no more than 2 minutes. Oil should be warmed up.
  8. Serve with hollandaise or cheese sauce.
