Breadcrumbs and an egg hold all the ingredients together among themselves, but to make cutlets easier to shape and they do not fell apart during frying, pre-cool well stuffing. - 2 green onions, finely chopped

- 1 large egg, slightly beaten

- 1 tsp Worcester sauce
- 2 tsp Dijon mustard
- 1 tbsp. l freshly squeezed lemon juice + lemon wedges for filing
- 0.5 tsp seasoning old bay
- A little hot sauce
- 450 gr lumpy crab meat or claw meat, sort through

Recipe preparation:
- In a large skillet with a non-stick coating on moderately over high heat, heat 2 tsp. olive oil. Add shallots and bell peppers and fry until vegetables begin to soften, about 2 minutes. Cool a little. In a small bowl, mix 0.5 tbsp. breadcrumbs, egg and milk. In a medium bowl mix Worcester sauce, mustard, lemon juice, Old Bay seasoning and spicy sauce; stir in crab meat, mix from panko, mix from fried pepper and onions, 1/4 tsp salt and a pinch of black pepper. Form 8 cutlets and put them in the refrigerator for 30 minutes. Roll the crab cutlets in the remaining 0.5 tbsp. breading crackers. In a frying pan over medium heat, heat the remaining 1 Art. l olive oil. Sprinkle crab cutlets with culinary spray and fry, sprinkled side down, 3-4 minutes. Sprinkle top with a culinary spray, turn over and fry for another 3-4 minutes. Serve with lemon wedges.
