Cranberry Pumpkin Muffins

These autumn pumpkin muffins are perfect for the festive season. breakfast or snack.

They are cooked with pumpkin puree, dried cranberries and flavored with orange zest. You can complement the taste, cutting muffins and spreading with curd cheese or your favorite jam or jam.

  • 2 tsp baking powder
  • 1/2 tsp fine salt
  • 110 gr. (8 tbsp.) Unsalted butter, molten
  • 1/2 tbsp. pumpkin puree
  • 1/2 tbsp. whole milk
  • 2 large eggs
  • 1 tsp orange zest
  • Turbinado sugar, to sprinkle

Recipe preparation:

  1. Preheat the oven to 180 ° C. Insert into recesses of mold 12 paper liners and lightly spray with oil spray.

  3. In a medium bowl, combine flour, granulated sugar, seasoning for pumpkin pie, baking powder and 1/2 tsp. salt, set aside side.
  4. In a large bowl, combine butter, swollen cranberries, mashed potatoes pumpkin, milk, eggs and orange zest. Add the flour mixture and gently mix until smooth (this is normal, if the dough is lumpy).
  5. Pour the dough into a muffin pan and sprinkle on top of a sugar turbinado. Bake muffins until golden brown, 20 to 24 minutes, toothpick, inserted in the center should come out clean. Cool the muffins on bars.
