Crab meat puree soup – a detailed recipe cooking. Photo of the dish: Кон ПулосTime: 1 hour. 25 minutes Difficulty: easy Servings: 6 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 230 gr. diced crab meat
- 1 tbsp. chopped greens (parsley, chervil, basil)
- Juice of one lemon, 1 tsp. grated zest
- 3 tbsp. l olive oil
- 6 slices of white bread, diced
- 4 tbsp. l (60 gr.) Butter
- 1 feather leek, cut into thin rings
- 350 gr potatoes, peel and dice
- 1 medium onion fennel, core and chop cubes
- 1/2 tbsp. dry white wine
- Salt and Freshly Ground Peppers
- 1/2 tbsp. fat cream

Recipe preparation:
- Marinate crab meat: stir meat in a bowl crab, 2 tablespoons of greens, half a teaspoon of lemon zest and half lemon juice, salt and pepper, cover a bowl wrap and refrigerate.
- Prepare croutons: mix the remaining in another bowl lemon zest and juice with olive oil. Add chopped dice bread, salt and pepper, mix. Melt in pan 2 tablespoons butter and add bread, fry at medium-high temperature, until golden brown, about 7 minutes.
- Cook vegetables: melt in a pan 2 tablespoons butter, add leek, and fry until soft, about 5 minutes. Add potatoes and onion fennel, continue cooking for another 7 minutes. Pour in wine, add 2 teaspoons tablespoons of salt and 1/4 teaspoon of pepper, simmer another 2 minutes. Add 5 cups of water and 1/2 cup of herbs, bring to a boil and cook over low heat until cooked, about 20 minutes.
- Cook the puree soup with crab meat: shift vegetables with broth in a blender and grind to a puree state. Pour back into the pan, add cream and boil, 5 – 10 minutes, then add the remaining greens. Pour the soup on plates add crab meat, pour marinade and sprinkle with croutons.
