Ingredients for the recipe:

Crab cutlets

  • 1 tbsp. chopped into large crumbs of salt crackers (approximately 90 gr.)
  • 1 large egg, beat
  • 1/2 tbsp. mayonnaise
  • 1 tsp worcestershire sauce
  • 1 tsp freshly squeezed lemon juice
  • 1 tbsp. l chopped fresh parsley
  • 1 tbsp. l chopped celery leaves
  • 1/4 tsp celery seed
  • 1 tsp mustard powder
  • 1/4 tsp chili powder (mix of spices with chili recipe see here)
  • Coarse salt and freshly ground pepper
  • 450 gr crab meat or imitation crab meat
  • 6 tbsp. l (85 gr.) Butter, melt

Sauce

  • 1 tbsp. mayonnaise
  • Juice 1/2 Lemon
  • 3 tbsp. l chopped pickled cucumbers
  • 1 tbsp. l worcestershire sauce
  • 1/2 tsp hot sauce
  • 2 green onion feathers, cut into rings
  • Coarse salt and freshly ground pepper

Salad

  • 1 large head of lettuce, coarsely chopped
  • 4 small heads of red or white endive (chicory), cut each lengthwise into four parts
  • 1 tbsp. cherry tomatoes, cut each in half
  • 4 internal celery stalks, leaves, coarsely chopped, stems dice
  • 4 feathers of green onions, cut in half lengthwise, then chop 4 see stripes
  • 1/2 tbsp. leaves of fresh chervil, tarragon and / or dill
  • 1/2 tbsp. fresh parsley leaves
  • 1/4 Art. olive oil
  • Coarse salt and freshly ground pepper

Recipe preparation:

  1. Cook the crab cutlets: sprinkle half the crumbs crackers in a large bowl. Add egg, mayonnaise, Worcestershire sauce, lemon juice, parsley, leaves and celery seeds, mustard powder, chili pepper, 1/2 tsp salt, and pepper to taste. Add crab meat and mix gently. Form from minced meat six cutlets. Pour the remaining cracker crumbs into the dish and roll cutlets in crumbs. Place cutlets on a baking sheet, cover with foil and cool to hardening within 2 to 6 hours
  2. Prepare the sauce: mix mayonnaise, lemon juice in a bowl, pickled cucumbers, Worcestershire sauce, spicy sauce and chives. Season with salt and pepper. Cover and keep the sauce in a cool place before serving.
  3. Heat the oven to 230 ° C. Pour the cutlets with melted butter and put in the top of the oven. Bake until golden color for 15 to 20 minutes.
  4. Meanwhile, make a salad: mix in a large bowl lettuce, endive, tomatoes, celery, green onions, chervil and parsley. Add olive oil, salt and pepper to taste and mix gently. Serve crab cutlets with sauce and salad.
