Crab cutlets
- 400 gr. crab meat
- 115 gr. mayonnaise
- 230 gr. crackers focaccia
- 60 gr black olives, take out the bones
- 115 gr. ready-made white fish sauce (recipe see below)
- 4 onions, finely chopped
- 2 tsp chopped onion – chisel
- 1 tsp lemon juice
- 1 tsp worcestershire sauce
- 8 plum tomatoes, cut into slices, for serving

- 8 slices of finished lobster meat (neck), for serving

Focaccia rusks
- 1 medium focaccia, cut into thin slices
- 1/2 tbsp. olive oil
- Salt and pepper White fish sauce
- 1 tbsp. l chopped shallots – shallots
- 1 tbsp. l olive oil
- 115 gr. strong fish stock
- 115 gr. fat cream (33%)
- 2 tsp mustard seeds

Recipe preparation:

- Cook cutlets: mix green onions and onions – cutter, then add peeled crab meat, season with salt and pepper to taste, then mix mayonnaise, lemon juice, and Worcestershire sauce. Divide the minced meat into parts of 100 – 115 gr., to form cutlets, then bread. Put on a pallet, and place in the refrigerator for solidification for a period of at least 2 hours
