Difficulty: easy Servings: 4 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 30 gr whole grain noodles
  • 2/3 Art. peanut paste
  • 1-2 tbsp. l red curry paste
  • 2 tsp rice wine vinegar
  • 1 lime juice and serving wedges
  • 1/3 Art. fresh cilantro leaves and some more for decoration
  • 2 shallots, finely chopped
  • 1 peeled and peeled cucumber and thinly sliced stripes
  • 1 large carrot grated in Korean carrot style
  • Red pepper flakes, cilantro or chili paste for serving wish)

Recipe preparation:

  1. Bring a large pot of salted water to a boil. Add noodles and cook as indicated on the packaging. Leave 1/2 tbsp. decoction from cooking for sauce, strain the noodles and rinse under cold water. Strain off excess water.
  2. Whip peanut butter, red curry paste, wine vinegar, lime juice, cilantro, 1/2 tbsp. water and 1 tsp. salt in a food processor or blender until smooth.
  3. Before serving, mix the noodles with the sauce, shallots, cucumber and carrot. Season with salt and mix. Lay on plates, sprinkled with flakes of pepper and cilantro. Serve with spicy chili paste in separate bowls and lime slices.
