- 450 gr large shrimp cleared of shells and intestinal veins, tails remove
- 1 tbsp. coconut flakes
- 1 zest zest and juice
- Protein 2 large eggs
- 1/4 Art. chopped fresh cilantro
- 1/4 tsp red pepper flakes
- 1 small clove of garlic
- Half a small pineapple, peeled and core and coarsely chopped
- Special equipment: 7 wooden or bamboo 15 cm skewers, soaked for 30 minutes in water

Recipe preparation:
- Preheat the oven in grill mode. Place on a baking sheet grill. Place 3 shrimps on each of the seven skewers.
- In a shallow bowl, mix coconut, lime zest, 1 tsp salt and a little ground black pepper. Grease shrimp egg whites, then squeeze to a coconut mixture to completely cover them. Transfer to prepared baking sheet and fry in the oven, turning in the middle of frying the other side, until coconut flakes will not turn golden, and shrimp will not turn pink and matte in the middle, 3-4 minutes.
- Meanwhile, in a blender, mix cilantro, flakes of red pepper, garlic, pineapple and lime juice and chop until smooth bright green color. Serve the sauce with shrimp.
