Recipe preparation:
- Preheat the oven to 220ºС. Heat a heat-resistant pan (30 see) over high heat, and a small skillet over medium heat. Pour 1 tbsp. l olive oil in a large pan. Clean and chop the onion coarsely, add to a large pan. Roughly cut two thirds of the thighs, finely chop the rest and add the onion. Cook within 6 minutes or until golden brown, stirring occasionally. Place the mushrooms in a dry pan. Sauté for 4 minutes, then add to the chicken along with half the thyme leaves.
- Remove the pan from the heat, add a pinch of sea salt and black pepper, then mix with 1 tbsp. l red wine vinegar and 150 ml. water. Roll out the dough quickly so that it is on 2 cm. More than a pan, then place it on top of the filling, using a wooden spoon, season the edges. Make small incisions, grease 1 tsp. olive oil. Put the remaining thyme twigs in the middle of the pie. Bake for 15 minutes., or until golden brown.
