Ingredients for the recipe:
- 2 chicken breasts, without skin and bones (about 300 gr. Each)
- 1/4 Art. plus 1 tbsp. l olive oil
- 2 cloves, finely chopped garlic
- 1/4 tsp red pepper flakes
- 450 gr tomato puree
- 0.5 tbsp. plus 2 tbsp. l grated Parmesan cheese
- 1/4 Art. shredded basil
- 0.5 tbsp. flour
- 3 large eggs
- 1 and 1/4 Art. grated Mozzarella cheese (about 170 gr.)

Recipe preparation:
- Cut the chicken breasts across and along to make 4 thin natural cutlets. Put in cling film and beat off hammer or heavy frying pan to a thickness of 0.6 cm. Preheat 1 tbsp. l olive oil in a medium saucepan over medium heat. Add garlic and red pepper flakes, cook for about 1 min, until garlic will not become soft.
- Add tomato puree, pour 1 tbsp into a jar. water, rinse and pour the contents into the pan. Stew until the sauce thickens, about 10 min Mix 1/4 tbsp. Parmesan and basil. Half the resulting mass, distribute along the bottom of the baking dish with a volume 3000 ml. Preheat the roasting pan or oven with grill.
- Meanwhile, combine the flour, 0.5 tsp. salt and 0.5 tsp pepper in a flat dish. Beat eggs with 1/4 tbsp. parmesan in another shallow capacity. Preheat 2 tbsp. l olive oil on pan over medium heat. Roll in flour 2 chicken cutlets, shake off excess flour, dip in egg mixture. Gently place in a pan, fry until golden brown for 2-3 minutes. with each side.
- Place the patties in the baking dish. Add the remaining 2 Art. l olive oil in a pan and sauté in the same way 2 the remaining chicken cutlets. Then place them also in the mold for baking.
- Combine mozzarella and the remaining 2 tbsp. l parmesan in a separate capacities. Sprinkle the chicken with half the cheese mixture, pour over the top the remaining sauce and the remaining cheese. Bake until melting cheese, about 2 minutes.
