Churrasco – grilled meat

The word “churrasco” in Spain, Portugal and Latin America called char-grilled meat. Perfect for cooking beef skirt steak. Grill it and serve, adding flavors of other components from bright and colorful Latin American cuisine. The meat is marinated before frying Argentinean chopped greens chimichurri sauce with garlic, lime juice and olive oil. And for a garnish for steak, cook Cuban rice congri, or rice with beans, and a Mexican snack guacamole from avocado. A good addition to the dish will be fried quail eggs.

Difficulty: medium Servings: 4 Measured containers are used in recipes volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

Chimichurri sauce

  • Half a bunch of parsley
  • 1 bunch of fresh cilantro
  • 6 cloves of garlic
  • 0.5 tbsp. freshly squeezed lime juice
  • 1 tbsp. olive oil
  • 1 skirt steak weighing 0.9 kg.

Rice Congry

  • 1 tbsp. dry black bean
  • Half a large white onion, chopped into small pieces cubes
  • 2 cloves, minced garlic
  • Half diced red bell pepper
  • Half green diced bell pepper
  • 55 gr. pancetta diced in small cubes
  • 2 tsp ground zira
  • 1 tbsp. long-grain white rice
  • 1 bay leaf
  • 4 quail eggs
  • Guacamole for serving, see recipe below

Guacamole

  • 2 ripe diced avocados
  • Half Tomato Bull Heart Chopped
  • Half a bunch of cilantro chopped
  • 3 lime juice
  • 4 tbsp. l olive oil

Recipe preparation:

  1. Chimichurri Sauce:

    Add parsley, cilantro, garlic, lime juice and butter to the blender bowl and grind until smooth.

  2. Pour skim steak with chimichurri sauce and put overnight pickle in the fridge.
  3. Congry Rice:

    Soak black beans overnight in water. Then drain, but do not pour it out.

  4. In a saucepan over medium heat, fry the onions, garlic, sweet pepper, pancetta and zira until onions become transparent and from pancetta all fat will be swept. Add rice and fry, making sure that the whole rice covered in fat. Add the water in which the beans were soaked and beans and mix. Salt and pepper. Add bay leaf and cook, covered with a lid, until the liquid is absorbed and rice cooked.
  5. For submission:

    Place the pan over medium heat or heat the gas or charcoal grill. Grill the steak to the desired degree of frying. When it’s almost ready, fry quail eggs eggs.

  6. Cut the steak into 4 portions and lay the guacamole on top. Serve with rice and fried eggs.
  7. Guacamole:

    Mash avocados, add tomatoes, cilantro, lime juice and olive oil and mix. Salt and pepper.
