Difficulty: easy Servings: 4 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 350 gr wide rice noodles or pappardelle, fettuccine
  • 2 tsp dark sesame oil
  • 1/4 Art. oyster sauce
  • 2 tbsp. l rice vinegar
  • 3 tbsp. l vegetable oil
  • 1 small eggplant, cut into circles
  • 1 tbsp. any fresh small mushrooms (120 gr.)
  • 2 cloves of garlic, cut into slices
  • 350 gr minced turkey
  • 1 bunch of green onions, cut into rings
  • 1/4 Art. chopped fresh cilantro
  • Salt

Recipe preparation:

  1. Boil the noodles in salted water as shown on packaging. Leave 250 gr. water in which the noodles were cooked. Drain water and rinse the noodles. Transfer noodles into a large bowl and mix with 1 tsp sesame oil.
  2. Mix in a bowl oyster sauce and vinegar, set aside side.
  3. Cook vegetables: fry in a large pan in 2 tbsp. l eggplant vegetable oil, approximately 2 minutes. Add mushrooms and fry another 1 minute. Move vegetables in a pan to the side and add the remaining 1 tbsp. l vegetable oil. Add garlic and fry for 30 seconds. Add the minced turkey and fry, stirring, until ready, about 3 minutes. Stir turkey mince and vegetables, add green onions and half a mixture of oyster sauce, and cook another 1 minute.
  4. Add to the vegetables and turkey noodles, left broth, mixture oyster sauce and 1 tsp. sesame oil. Cook constantly stirring until tender, 1 to 2 minutes.
  5. When serving, sprinkle Chow fan cilantro on top.
