Chinese-style gourmet chicken liver

  1. Divide the chicken liver in half, remove the fat, if any. Rinse thoroughly with water. We cut into pieces the size of one bite. Soak in milk for 20-30 minutes.
  2. Making the sauce in a glass. We mix starch, soy sauce, sugar, cognac (optional) and mix. Pour in water and again mix.
  3. Peppers, peeled from seeds, cut into cubes. Also chopped peeled onions and garlic.
  4. Cook over high heat and stir all the time. This is very important! First, well heat the vegetable oil in a pan, in we spread the liver and quickly fry for 1 minute, constantly stirring. Chicken liver should only lightly grab and change your color to a lighter color (do not fry longer, then the chicken liver will be overdried and tasteless). We shift the liver to a plate.
  5. In the same pan we put bell pepper. Fry for 2 minutes. Then we fall asleep onions. Fry for another 2 minutes, stirring, the onion should become a little golden. Pour ground ginger and chopped garlic.
  6. After 30 seconds, put the chicken liver in the pan again to vegetables. Mix and let the liver warm up well (about 1 minutes). Add coriander, salt, pepper.
  7. Stir the soya-starch sauce again so that starch did not stay at the bottom, and immediately pour it into the pan to liver and mix everything.
  8. Put chopped chives and cilantro if you didn’t add coriander. Stir again and keep the pan over high heat no more than 2 minutes. As soon as the sauce thickens and becomes viscous, remove from heat and immediately serve, sprinkled with sesame seeds.
