  • 2 tbsp. l tomato paste
  • 2 tbsp. l chili powder
  • 1 tsp ground cumin
  • 1 coarsely chopped green bell pepper
  • 5 chopped green onion feathers (white and green parts apart)
  • Coarse salt
  • 2 tbsp. low salt chicken stock
  • 1 tbsp. crushed tortilla chips, and more for filing
  • Sour cream and cheddar cheese, served (optional)

Recipe preparation:

  1. In a large saucepan, heat vegetable oil to moderate high temperature. Add tomato paste, chili powder and cumin and cook, stirring, until the mixture darkens, about 1 a minute. Add 1/2 tbsp. water, bell pepper, white parts of green onion and 1 tsp. salt. Stir until half cooked sweet pepper, about 4 minutes. Add the minced turkey and fry for 4 minutes., kneading the meat with a wooden spoon.
  2. Add tomatoes, chicken stock, beans and crushed to the pan corn tortillas; mix and bring to a boil. Cover lid and cook, stirring occasionally, until the mixture thickens, 10 – 12 minutes.
